Here is a recipe you will find in almost all of the eateries in Italy. It is usually served as an appetizer, but it makes a fine salad or meat accompaniment..
Cut the mozzarella into
½" squares or ¼" slices, depending upon the type of mozzarella
used. Cut cherry tomatoes in half. Cut Romas into small pieces. Put cheese and tomatoes in an oblong serving dish. Mix oil, vinegar, salt and pepper together. Sprinkle over tomatoes and cheese, sprinkle with parsley. Serves about 6 for an appetizer. |
