
A slight variation of
Tiramisu' , this dessert combines Biscotti, mascarpone, cream
and raspberries. It is an impressive dessert that belies its brief preparation time. Please serve it in individual wine or brandy
glasses.

1 pound. mascarpone |
 |
1 pint fresh raspberries or strawberries |
 |
1/3 cup espresso, brandy or rum |
 |
1/2 pint heavy cream |
 |
1/2 cup sugar |
 |
About 1/2 doz. Biscotti cookies (available at specialty stores)
Or the same amount (8 oz.) of sponge cake or ladyfingers |
Break
up the cookies or whatever you are substituting and soak them in the coffee or the liquor.
Mix the mascarpone and the sugar in a mixing bowl. Whip the heavy cream in a separate
bowl. Gently fold the cream into the other mixture. Clean berries and put in a small bowl,
mixing a bit of sugar gently with them. Try not to smash the berries.
Set out 6 serving
glasses. Put some of the cookie mixture in the bottom of each glass. Put some berries over
this. Spoon some of the cream mixture into each glass. Repeat the procedure until all
ingredients are incorporated into glasses, saving some of the best berries for garnish on
the top. If you have any fresh mint, put a sprig of it with the berries on the top. Makes
about 6 servings. |
